Tips & uses
• For mochi/tang yuan: mix with water (and sugar) to form a smooth dough, steam/boil until translucent.
• Boba pearls: combine with hot water and a little sugar, knead, roll and boil.
• For crisp-chewy batters: replace 10–30% of regular flour with glutinous rice flour.
• Not the same as regular rice flour—this one makes things chewy.
